Recipe: Purple Power Salad

If you’re wanting to lose weight and tone up, the key is not to eat less. It’s actually better to eat more – of the right foods! And the right foods are nothing fancy. It’s good old fashioned veggies. While that may sound totally boring, the good news is that there are so many delicious things you can do with veggies, and this week’s creation is the perfect example of that. Packed full of colour, this easy to prepare salad was a hit in our household! Get amongst the Purple Power Salad! Ingredients:n3 cups red cabbage, choppedn1/2 cauliflowern1/2 eggplant, chopped into 4 pieces lengthways 1 x can of diced beetroot, drained 1 x red onion, chopped 1/4 cup sultanas 1/4 cup walnuts Method:nPlace eggplant onto hot pan and grill on both sides. Put onto plate and allow to cool. Chop into small pieces.nChop cauliflower into florets and place into food processor. Mix until it’s small, rice-sized pieces. Place into a bowl.nAdd eggplant, beetroot, onion, cabbage, sultanas and walnuts to the bowl. Stir to combine. Serve with a protein source and… Enjoy!
